So this morning, 10 mile run, froze my butt off and got blasted by the wind.

Afterwards, drove down to the hospital to get a mole removed…..

…..on my breast.  Not the most pleasant experience but it went surprisingly smooth.  I didn’t even know the dermatologist removed it. It was 1cm and she pretty much cut out more than half an inch I believe (dont know, the sealed wound is close to an inch).  The doctor stitched it up real nice(it looks like a pretty damn good Frankenstein if you ask me lol). If it weren’t for my high tolerance of pain I would probably be crying right now because of how badly this thing is now throbbing and how BADLY i want pain killers and dont have any.

And I learned a fun fact while getting my stitches: One stitch costs about $10 (they do not want to waste their stitches!).  So yea I may have 5 stitches on the outside, but who knows how many stitches I have on the inside…thank goodness for insurance 🙂

I asked her about running, she told me to not run today. But after today when i do, to make sure I apply some bandaids and wear a well supported sports bra…..well supported sports bra….I don’t even know what well supported sports bra feels like I think.  The closes I think I have gotten were the ones by Nike that compressed everything to your chest.

And I swear they increased their sizes because I had to buy an extra small and I usually get a small in these…and no my chest did not shrink.  These bras tend to restrict my breathing when I first get them. (As far as budgeting myself goes….yea this splurge on bra and the capris I randomly bought pretty much killed my last paycheck)

Honestly I didn’t feel any pain until 6 hours after I left…yick.  Anyone else have similar experiences and would like to share?

Seriously…it snowed last weekend and that was it for this month…so far, there’s still 10 days left!

Did my long run, and I will be thankful for painkillers and Dr. Scholl’s inserts for Planters Faciitis.  I got it back in October (due to the running schedule of high milage one week, low milage next week, high milage week followed by low milage week, ect.  Usually it’s 3 weeks increase milage and 1 week back off).  I’m pretty sure I have it back in my left foot, and now in my right (I am a dummy who tied their shoes on too tight.  Anyways, I guess when your watch reads 8min/mile for your long run instead of the usual 8:40 I guess that says something haha.

Recap on my budget challenge again…I used my credit card yesterday, but only for gas.  I planned on using whatever I had in my bank for gas anyways since I have cash floating around left and right, it’s an awesome day when you do laundry and a 10 dollar bill falls out of your pocket.

I also snagged a huge fruit tray for free on Thursday.  My friend and I went to see this guy from Business Week talk about how they design their magazines (British people, love your accent, hate trying to pick up on what you are saying).  I guess looking like a starving college student made 3 people walk up to us and ask us to take the trays since it was going to go to waste…um….SCORE!!! There’s a ton of grapes and I really want to try making raisins from my dad’s dehydrator and make english muffins (they’re so expensive to buy!)

I don’t have any recipes this time around…that deal with pancakes or breakfast foods…but…

Enjoy your day with the biggest peep in the world (and sugar rush jk).  I like to put marshmallows in my coffee for some reason.

 

I feel like I need to update before the weekend…not too much has happened except for dread on what the next week will bring me. (and no I am not talking about Valentine’s day)

I am talking about being a student athlete.

Some of you may be aware that I compete for Cross Country, Indoor and Outdoor track.  Many of you may not know that our schedules for competition are “lighter” than in highschool.  We compete on the weekends.  Cross country is usually half a day or overnight.  Track is either all day or 3 days (this includes the travel time).

What I am getting at is this:  it’s very frustrating to balance homework, life, track, getting money (as in a job haha), working on my future career after I graduate.  I am working towards a BA in Graphic and Web design, I need my computer to do my work not a book to dig my nose into and memorize words that I will possible forget in a year.  I am also not the only one on my team with this double BA major, the other girl also feels the same way.

What other people don’t realize is that we are creative people who have creative projects.  It takes time and effort and dedication to put good work out there.  I have seen kids in my class that half-assed their work just to satisfy a professor.

 

Seriously sometimes I wonder if my mind is constantly on some sort of high (runners high!!!)

Back to my challenges:

Smiling seems to have helped in many ways.  Like when a printer randomly decides it doesnt want to print because it thinks it has no paper….force a smile, stare at a wall, and instantly you wont feel like throwing the printer out a window.

As far as budgeting….well my recent paycheck from work study was less than I thought I was going to get. I was going to use that money to sign up for a marathon (well I still am, the deadline for cheap registration ends the 15th). So I can’t use my credit card for a month.  So here’s to 30 days of not using a credit card…starting…now.

I have no idea what day…but  I do know that I started on the 9th so this makes day 22.  This weekend I spent….$1 on water.  The $5 I got from friday went towards…egg whites to add to my egg and frozen blueberries(darn those blueberry pancakes).  I didn’t even buy gas, my friend was generous enough to put a few bucks in my tank since she needed a ride.

Out of my meal plan money, I spent money on the cheapest stuff there, eggs, soy milk, peppers (a lot of people don’t know you can buy these), apples and bananas, yogurt, tons of cottage cheese.

I also got my Canon battery back 🙂  Omnomnomn. An egg, 1 part egg white, some red peppers, salsa, a lil’ bit of cheese:

I love how the colors pop out with my canon, it’s seriously making me hungry….oh and so is this apple cinnamon oatmeal with blueberries…and some guy fishing for oats:

Tomorrow is Feb 1st…I was debating on if I want to start a new challenge or not. (I’m definitely doing a reflection on this budget challenge tomorrow.)

So the internet shut off here…so I’m cramming 2 days worth of stuff.

Morning workout on Tuesday morning, I got pulled from it since I decided yesterday to just blast through the run lol.  Also I found out that my graduation is the same weekend as the last track meet…whelp guess I’m going to graduation…and pull $100 out of my next paycheck and sign up for the Pittsburgh marathon…or half…I don’t know!

Did you know that it was national peanut butter day?

I took yesterday’s oatmeal mixture and added 1 Tbs. of Peanut Butter.  I should’ve added 1/2 Tbs. because it wouldn’t set and I almost burnt it because it wouldn’t microwave correctly….<insert durp moment>.

I also got a ton of work done regarding school, my senior project is destroying and completely redoing this website for my dad.  I only have the layouts….100 different layouts (I’ll be here all night!)

Wednesday…was a long day. I woke up at 5:15am to run before class, forgot to make breakfast but packed a ton of stuff for lunch (peanutbutter sandwich and mac n cheese and something else).  So…ended up using mealplan money to buy breakfast.  Then took a walk around downtown to get rid of the bad mood i was in to get some serious decent coffee from a Crazy Mocha – $2.50! But it was totally worth it.

I also made smileyface pancakes…and i wish i had a working camera right about now (no pictures are lame right?) I’m still waiting for the battery to come in the mail.

 

Today’s weather….sunny with a chance of pelting rain.  Yup that was an enjoyable 10 miler of pelting rain that pretty much blinded me for a few minutes…did i mention there was a lot of oncoming traffic?

Back to Budget Challenge….I ended up buying stuff yesterday at the cafe and some more stuff today from the cafe. I might be over on my account now (I really have no idea anymore my meal plan got changed so many times).

I also made this nomtastic oatmeal cake from Love Veggies and Yoga.  She has a lot of awesome recipes I want to try. And she also has a link to a yoga site that you can download some free PDFs and audio (yogadownload.com, check out the poses tab)

I changed it up a bit:

Ingredients:

  • 1 Packet of apple cinnamon oatmeal
  • 1 bannana

Directions:

  1. Mash Banana (microwave it for a max. of 10 seconds if it came from the fridge, its so much easier)
  2. Mix both ingredients together. Split the mixture in half. (it makes 2 servings!)
  3. Place 1 serving of mixture in a microwave save bowl.
  4. Microwave for 90 seconds.
  5. Let it cool down a bit and harden before removing from bowl
  6. ENJOY! (I need to be more consistent with layouts lol)

I also found out today that I might possibly have a protein deficiency. I mean I usually have dry hair, my nails show that I’m not getting enough (This fortune teller last fall told me this). Although I think I may have gone overboard with the budget thing and forgotten how to eat healthy. Did you know your ankles swell up when you have a protein deficiency? I didn’t know that! Also that your gums bleed more easily (this happened last night). So I think I need to start taking things in a new direction.

These past 2 weeks I have learned a lot I guess, like planning my meals in advance and planning them according to what my schedule is going to be like for the next couple of days it will still be edible.  Also I need to start eating healthier. Budgeting =/= cutting out certain nutrients.  I mean yes, I’m not going to the extreme on this, but hte fact that I’ve been buying the cheaper stuff (things with lots of carbs) has probably thrown me out of balance a bit.

I am a vegeterian also, so this probably is also a challenge concidering trying to come up with meals that fit my nutritional needs as a competitive runner (60% carbs, 20% protein, %20 fat, at least from what I’ve always seen/heard/read).

Havn’t bought anything from the cafe, except for milk (I ran out, I cant drink coffee without it). I also started using the massive storage of food in my room.

Two nights ago, a blizzard came to town (I somehow managed to drive to my house afterwards last night), I went over my friend’s house to kill 1 of the 7 boxes of pierogies in my freezer.
Then yesterday was the long run of 2 hours, then I ended up at iHop (once again, it was offered). I probably made dinner twice this week, which I like to cook my food so that was different. Although I did end up buying coffee creamer (Shopper’s Value from Kuhns, under 3 dollars!) and then I realized that I needed to buy my graduation application…..this makes me angry because I am already 40,000+ in school loans and they want me to pay them another “small” sum just so i can graduate???? ugh…seriously? And on another note, I still can’t pick up hours at my old job 😦

Did/Do you have to pay a fee in order to graduate? Im curious.

Today is Day 10 of my mini-challenge.
First off, I went home for my birthday this weekend. Ate out A LOT. Had my phone get blown up and literally brick itself because it couldn’t handle all the notifications D:

Anywho, my mom and I wen to this Japanese Restaurant (We were gonna go to this place called Loving Hut, all vegan, but they were closed). Nothing to take home and eat later because we ordered appetizers (the main dishes were expensive and there was no way I was going to fit a salad, soup, rice and the whole dinner and dessert and take it home lol)
I also durped on the recipe from yesterday, it makes up to 2.5 cups, not 4. 1 serving is 2 Tbsp not 1/4 cup. Ahaha I’m a goose sometimes.

Now here’s a real kicker…I went up to the cafeteria to get a salad (and some other things) since I really didn’t feel like cooking and I ate like a pig the past 4 days. I found out that I am possibly $200 under for the week…how is this possible? Probably because I bought a bunch of crap last week and forgot about my stash in my room of 10 boxes of rice, 10 boxes of oatmeal, spaghetti, mac n cheese, half the market place just sitting in boxes.
My next plan of action? Not to buy anything from my meal plan until Monday (I work mondays and I literally have no choice but to buy dinner there), I mean that’s pretty much one of the reasons why I am doing this.

So I guess adding to this challenge would be to not waste food. (Last week with the rice and the remaining amount of curry I had left…yea).
I made about 4 cups of hummus…well I THINK it is hummus, I thought I had chickpeas and it turned out to be a pound of pinto beans. I substituted peanut butter for tahini, since I had no idea where to get it anyways and didn’t want to pay an arm and a leg for a jar.

Pinto bean & Peanut Butter Hummus:

  • 2 pound can of pinto beans, drained and rinsed.
  • 6 Tb. Peanut Butter
  • 2 Tb. Olive Oil
  • 1/2 squeezed Lemon
  • Ground Red Pepper (to taste)

Directions:

  • Drain the can of pinto beans (save the liquid!) and rinse them good.
  • Microwave pinto beans for about 20-30 seconds (easier to mash)
  • Mash the pinto beans (or use a food processor, I prefer this way because it still leaves some of the texture)
  • Add the peanut butter, olive oil, and lemon. Mix well
  • Add in the Ground Red Pepper, mix in. Adjust to your tastes.
  • Add the liquid (or water) for a less thicker hummus.
  • REFRIGERATE!!!

This makes about 2.5 cups of hummus.

    Serving Size: 2 TB
    Calories: 95
    Fat: 5g
    Carbs: 8g
    Fiber: 2.5g
    Protein: 4g

This actually turned out VERY good. In fact my dad tried to steal the whole container (I am promising him a portion of it, as he keeps eating it lol). I did add a little bit of garlic, but you can’t really tell there is garlic in there. (I add a lot of spices)

Since I have no class today, I decided to run before the crack of dawn. For those of you who like to run, run when the sun is coming up. It’s so beautiful.

EDIT: I really miscalculated the amount it makes.

So…I threw out the rice, it got all hard and dry (can’t seem to get around it) and i remembered reading somewhere that rice grows bacteria = food poisoning (yick).

I went to the market place on campus to see if they actually got bread in…and they don’t have any.  The only other option was to buy their bread, which is an extra dollar. …Um no.  You’d think that it being the first week of classes that they would put bread on their shelves by this point.  I’ve been here since last Friday and I have yet to see bread…This calls for an adventure to Aldi’s.  Cheap food that is also healthy and not filled with preservatives (most of the time), except sometimes the stuff they sell is so close to the expiration date…so to the freezer my big ol’ loaf goes (where I stumbled upon 7 boxes of pierogies and 2 tilapia fillets.) The bread ended up being $1.15…and it’s a lot of bread.

So dinner turned into tilapia with roasted red pepper hummus (I eat fish once in a blue moon, I need the omega’3s).  Some of my pierogies and frozen veggies, i need to make more freezer room.

Cheap-o hot chocolate:

  • 8 oz. hot water (or milk if you have any, i don’t at the moment 😦 )
  • 1 heaping tsp. of baker’s cocoa
  • multiple tsp. of sugar, depends on how sweet you like it.
    Directions
    MIX MIX MIX MIX MIX!! mix very well or you will get clumps!

I’ll be gone for 2 days, so hopefully I can save meal money I am getting for my trip. So far I havn’t spent that much money on food, didn’t eat out, didn’t get my usual cafe au lait when I go downtown. Next week I might as well add a goal to my budget challenge to make it more interesting.
